One of the ten most famous teas in China. It is said that Long Jing tea is the beauty among all tea. Fresh green 'bird's tongue' shaped leaves create a sweet, aromatic, amber liquor with a lightly floral aftertaste. This superior quality tea is from Jhejiang Province, China and is the preferred drink for many leaders around the world. In fact, a certain percentage of the yearly production of Dragon Well is reserved for government clients.

Kukicha

Kukicha is a traditional green tea unique to Japan. It is created by blending tender leaves, stems and stem fibers that are collected during sencha and gyokuro processing. Our Kukicha is pleasantly aromatic, sweet and very balanced with a lovely velvety mouthfeel. It is a wonderfully bright green tea that is surprisingly not too grassy or vegetal, for a Japanese tea, delightfully aromatic and refreshing. It is ideal for those sensitive to astringency. It makes a great afternoon tea and it is fantastic as an ice tea. 

Story, Folklore, History...

Like sencha green tea, there are myriad health benefits of kukicha tea. Kukicha has been embraced for its remarkable ability to stabilize health and promote longevity. Its primary impact lies in its alkalizing abilities. It helps to alkalize the body’s fluids and tissue, thereby balancing acidity levels and preventing disease. It is also packed with nutrients. Kukicha is sweet because it is high in L-theanine. The reason for this is that L-theanine is naturally produced in the roots, and from there it’s sent to the leaves via the stem. High L-theanine content and low caffeine results in a sweet flavor with very little bitterness.

Moroccan Mint

This traditional Moroccan tea is a refreshing blend of Chinese Gunpowder green tea and peppermint, and is great for alleviating heartburn. The classic recipe is heavily sweetened with raw sugar or agave nectar, however we've found that it is quite refreshing unsweetened as well. Moroccans drink this tea several times throughout the day, and on formal occasions, the tea is ceremonially prepared with beautifully crafted teaware. This tea can also be served cold with ice as a refreshing summer drink.

Story, Folklore, History...

The Moroccan Tea CeremonyThe Moroccan tea ceremony used to take place frequently but today, it is reserved for special occasions.
The host will sit in front of a tray on which there are two teapots and ornate teacups. On the table are the ingredients: boiling water, green tea, mint leaves, and sugar.
The ritual begins with the host rinsing the teapots with boiling water, to warm them up. Green tea leaves are added to each pot and are rinsed with the boiling water, to get rid of the initial 'bite'. Sugar is then added to each pot followed by boiling water.
The mixture of green tea and sugar is left to steep for several minutes, after which it is stirred and poured into the teacups.
When pouring this mixture, the host will pour from both teapots simultaneously from considerable height, and will only fill the teacups halfway. There is never a drop spilled. The guest can then enjoy this first cup of green tea while the host continues the ritual by adding more green tea leaves and sugar to both teapots, and refilling them with boiling water.
The initial water leftover in the teapots is not discarded. At this time, handfulls of fresh mint leaves are added to the teapots, and the aroma of sweet mint permeates the air. When the first cup of green tea is finished, this second cup, infused with additional sugar and fresh mint leaves, is enjoyed. It is this second steeping that is famous around the world.

This matcha is excellent for daily use and is best prepared as a matcha latte and is delicious with added sweetness.
Matcha is intensely energizing, mind stimulating and mood enhancing. Our organic matcha will provide a steady energy boost throughout the day without the caffeine crash.

 Directions...

Straight Matcha: Put about 1/2 tsp of matcha powder into a small bowl. Fill bowl with just enough hot (75C) water to cover the powder, then use a whisk to break up the clumps and make a smooth mix. Add about 2/3 cup more hot water, and whisk until you get a nice froth on the surface of the water. Serve immediately. Best enjoyed with a sweet dessert.

Matcha Latte: Put about 1 tsp of matcha into a cup and fill with hot water up to 1/4 cup. Using a whisk, break up the clumps of tea powder until you get a smooth mix. Fill up the rest of the cup with steamed milk. Add sweeteners such as honey, agave nectar or sugar. Enjoy.

Another great way to enjoy the benefits of matcha is to add about 1 to 2 tsp to your morning protein or berry shakes. It blends really well and adds a great healthy boost of antioxidants. You may also explore the other uses of Matcha in drinks, cooking and desserts.

Bare (Kombucha Tea)

The second least processed variety of tea, green teas vary significantly but are often grassy, vegetal crisp, buttery or even slightly smoky. This blend of teas is complex with grassy, floral, fruity, citrusy, smoky and vegetal notes. It produces a kombucha that has a bit of body, crisp flavour and light grassy undertones. It will pair well with any flavours. Some good options are citrus fruits, berries, herbs, tropical fruits, flowers or peaches.

This fantastic green tea blend can be used for any time of the day, not just for kombucha! We love it in the morning or for a boost of energy in the afternoon, instead of coffee. It's robust with a complexity of flavors that are enhanced with food, especially sweeter food.

Directions

Combine the following to make a 1 gallon batch of kombucha!
• 1 gallon (4 litres) clean, purified water
• 2 tablespoons loose tea
• 1 cup pure cane sugar
• 1 SCOBY
• 1-2 cups starter liquid
• 1-gallon wide-mouth glass jar
• Tea towel (or breathable fabric) and rubber band


Infuse tea in hot water (BOLD and BURNT can be infused in boiling water for 4-5 minutes. BRIGHT and BARE should only be infused in hot water, about 75-80°C for 3-4 minutes).
Remove tea leaves, stir in sugar and allow to cool. Only put your SCOBY in room temperature tea Note: to cool down faster, infuse your tea in 1 litre of hot or boiling water, then add the remaining 3 litres of cold water after stirring in sugar.
Pour your sweet tea into your wide-mouth jar, add the starter liquid and place in the SCOBY. Cover with a tea towel or cloth and secure with a rubber band.
Place the container in a warm, ventilated area out of direct sunlight for 7-10 days. After 5 days, taste your brew and continue to ferment if desired. Some find that allowing it to sit for up to 20 days works, but keep in mind that the longer it sits, the more vinegary it will taste.
You can enjoy right away, or bottle for a second fermentation, this is where it really starts to fizz! You can also add fruits, teas, herbs, spices, or any other organic plant-based ingredients to get your favourite flavour combinations.
